Spinach Ricotta Gnudi Mildly Meandering

We've got marshmallows, meringues and the occasional dollop of whipped cream. Don't worry, we've figured out two more, and they're not even dessert: gnocchi and gnudi. These two different styles of Italian dumplings are the perfect comfort food. They're filling without feeling heavy and are nearly always blanketed in a sauce that deserves.

Gnudi is primarily made with ricotta cheese and spinach, while gnocchi is made from potatoes and flour. In addition to the variation in ingredients, they also have different textures. Gnudi is soft and delicate while gnocchi is denser and chewier. Due to the potato content in gnocchi, it also has a more significant amount of starch.

Gnudi is the Tuscan word for "naked" (in standard Italian nudi ), [5] the idea being that these "pillowy" balls of ricotta and spinach (sometimes without spinach, which is also known as ricotta gnocchi) are "nude ravioli", consisting of just the tasty filling without the pasta shell.
