Instructions. Arrange champagne glasses. Place uni and/or shucked oyster in bottom of glass. Add ½ - ¾ shot sake. Match with the same amount of ponzu. Add ½ tsp sriracha/chile sauce, if you like it hot! (less, if you want less heat) Garnish with masago, fennel frond and green onion.

Allow mixture to sit at room temperature until sediments sink to the bottom of the bowl, about 2 hours. Shuck oysters; place 2 oysters in each shooter glass.
