In a large stainless steel bowl mix ALL ingredients until wet. Spray 6" x 3" spring form pan with non-stick baking spray (with flour) Pour the brownie mix into the pan and allow to settle. Smoke on the Traeger for 45 minutes at 180 Degrees. After desired smoke is reached turn Traeger to 325 degrees, leave brownies in the grill while it.

Smoke. Place the brownie batter on the grill grates of the smoker, close the lid, and smoke for around 20 minutes, or until the batter is just starting to set. Add more caramel and bacon salt. Drizzle the top of the brownies with another 2 Tablespoons of caramel and 1 teaspoon of bacon salt. Finish smoking.

Step Five: Now, add the dry ingredients and vanilla. Mix until smooth. Add in ¾ of the chocolate chips. Step Six: Spread in the prepared pan. Top with the remaining chips. Step Seven: Place on the smoked and close the lid. Smoke for 60 minutes until the center only jiggles slightly.

Turn all burners to high, cover, and heat grill until hot (500°F; 260°C), about 15 minutes. Leave primary burner on high and turn off other burner (s). (see notes) In a 10-inch cast iron skillet, add butter, half the bittersweet chocolate, water, and espresso powder, if using, and place on cooler side of the grill.

Put all the dry ingredients into a bowl and combine. Add everything else except the chocolate chips and stir together. Mix in the chocolate chips. Pour into a greased silicon baking tin (mine's 28cm x 18cm and about 4cm deep). If you've not got a silicon one then line a metal one with silicon coated baking parchment.

Place in the oven for 20 to 25 minutes, then leave to cool completely in the tin before cutting into squares. To decorate, place the larger bacon pieces in the frying pan and cook until crisp. Remove and leave to cool. Melt the remaining bowl over a saucepan of simmering water (or bain-marie), or in a microwave on short bursts, until fully melted.

Whisk in melted chocolate until combined and smooth. Use a rubber spatula to stir in flour, cocoa powder, and salt until just combined. Stir in whole chocolate chips. Pour into prepared pan and smooth out. Bake in the preheated oven for 30 minutes. Let cool in pan 30 minutes before slicing.

Follow the directions on your brownie box (if you're making homemade brownies, follow your recipe!) Pour the mix into your cast iron skillet. Giggle excitedly. Fire up the smoker to the temperature that your brownie box suggests. Usually this is around 325-350 degrees Fahrenheit. Don't forget to add your wood!
