While the meat is cooking, finely dice the onion & garlic, slice the peppers and finely chop the tomatoes. The water in the pan will reduce and the pork will release its fat. Instructions. Pre-heat oven to 350 degrees. Season pork tenderloin on all sides with salt, pepper and garlic powder. In a large pan on medium-high heat, place olive oil. Place pork tenderloin in pan, and cook for about 2-3 minutes per side, until browned a bit. Turn off heat from stove.

Sear and brown the meat on all sides. Then reduce heat to medium and add the onion and garlic. Cook for a minute or two until they soften a bit and then pour in the wine. Add the bay leaves and allspice. Cook, stirring occasionally until all of the wine evaporates completely. Season with kosher salt and ground pepper.

Preheat the oven to 180ºC (350ºF). Wash and cut the tomatoes into halves. Place the pork loin on a baking dish and with a sharp knife give 3 to 4 cuts across the loin. Season with salt, pepper, paprika, sliced onion, unpeeled crushed garlic, tomato cut into halves and olive oil. Roast until the loin start to turn golden brown, about 1 hour.

Cook for 2-3 minutes, stirring to brown the meat. Add the diced onion and cook until tender. Add green chiles and the prepared tomatoes along with any juices in the bowl. Mix well. Cover and reduce heat to low. Simmer until the pork is fork tender and the tomatoes have cooked down to a mushy paste, about 3-4 hours.

Directions. In a large nonstick skillet, saute onion and garlic in butter until tender. add pork chops; brown on both sides. In a small bowl, combine the tomato sauce, wine or broth, oregano and pepper; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.

Directions. Preheat oven to 425 degrees F. Pat tenderloin dry, and season on all sides with 1/2 teaspoon of the pepper and 1/4 teaspoon of the salt. Heat olive oil in a large ovenproof nonstick skillet over medium-high. Add pork, and cook 3 minutes on 1 side. Turn pork, and cook until both sides are browned, about 2 more minutes.

Add Pork & Tomato Sauce: Place 1 cup of the tomato sauce in the bottom of the baking dish. Spread it out evenly. Arrange the pork medallions over the tomato sauce. Then, pour your remaining tomato sauce over the pork. Add Cheese & Bake: Top the dish with mozzarella cheese. Cover with foil, and bake for 25 minutes.

Press or grate the garlic cloves and mix them with the oil, tomato puree, and water. Add the paprika powder, dill seeds, salt, and pepper to taste. Mix well. Pour this mixture over the meat in the roasting pan making sure that all the pork slices are covered in sauce. If necessary, thin the sauce with a little bit more water to make sure you.

Add crushed garlic and stir for 30 seconds. Carefully add the dry red wine and deglaze the pan, stirring with a flat wooden spatula until the wine has reduced slightly about 2 minutes. and all of the browned bits have lifted from the bottom of the pan.

Starting on the Stovetop. Put the olive oil and 1 tablespoon of the butter into the skillet, and set over low-medium heat. Strew the sage leaves around the pan and cook them slowly for a minute or two as the butter melts and starts to sizzle. Salt the pork pieces, dredge them in the flour, and, when arrange all six in the pan.

Add the pork chops and sear on each side for 2 minutes. Transfer the pork chops to a tray while you start the tomato sauce. Add the hand-crushed tomatoes and half the basil to the pan and bring the sauce to a light boil. Add the pork chops back to the pan. The tomato should come close to covering the pork chops.

Pat the pork chops dry with paper towels. Season all over with the salt and cook until golden brown, 3-4 minutes per side. Transfer the pork to a plate. Make the sauce. Cook the garlic (briefly!) until fragrant, about 30 seconds. Stir in the tomatoes, pepper, basil, parmesan, sugar, and vinegar and bring to a simmer.
