Chicken Parmesan is the ultimate Italian-American restaurant meal. When done right, this dish is a masterful combination of juicy chicken, crisp breadcrumb coating, gooey, melted cheese, and tangy marinara sauce. But all too often, what arrives at the table instead is a plate of soggy and bland cutlets under rubbery cheese.

Transfer the chicken to a bowl, coat in a mixture of buttermilk, garlic, salt, and pepper, then transfer the chicken and marinade back to the bag to marinate for four hours or overnight. Before cleaning the kitchen for the night, remove the crust from a loaf of Italian bread, slice the bread, and arrange in a single layer on a rack to dry out.

Heat a quart of peanut oil to 350°F, drop in the chicken and fry for roughly 5 minutes or deeply golden brown. Drain on paper towels once finished. Place the chicken onto a wire rack in a rimmed baking sheet and top with fresh basil, slices of fresh mozzarella, and freshly grated parmesan cheese. Place in the broiler for just a few minutes.

Kenji chicken parm recipe I've been commissioned to make Chicken Parm recently and I don't have a go to recipe of my own so I was thinking of using the Serious Eats recipe. Anyone tried and tested it?? Some people say the buttermilk in the recipe isn't worth it.
