Finely chop the green onions, both the white and the green parts and add them to the bowl. Remove the seeds and membranes of the jalapeño and finely chop. Transfer to the mixing bowl. Finely grate the zest from the lemon and add to bowl. Cut lemon in half and add lemon juice. Add the remaining ingredients to the bowl and stir to combine.

To make the chimichurri sauce, combine the parsley, cilantro, green onion, oregano, garlic and lemon zest in a medium bowl. Add the olive oil, red wine vinegar, and 1/2 teaspoon of salt and whisk to combine. Season with more salt if needed. Place 1/4 cup of the chimichurri sauce in a small bowl and set aside.

Instructions. Mix all ingredients together in a bowl. Allow to sit for 5-10 minutes to release all of the flavours into the oil before using. Ideally, let it sit for more than 2 hours, if time allows. Chimichurri can be prepared earlier than needed, and refrigerated for 24 hours, if needed.
