Eel Cucumber Roll is a type of sushi roll that contains eel (usually grilled or barbecued), cucumber, and sushi rice wrapped in a sheet of nori (dried seaweed). Lift the edge of the bamboo mat up and over the filling with your thumbs. Press the rice and filling together by rolling the bamboo mat away from you. Continue to roll until the ends touch. Make 8 pieces out of the roll. Drizzle unagi sauce on top of the sushi for a great finishing touch.

Once the unagi is cooked, cut into strips length-wise. Set them aside. Prepare the vegetable. Cut the cucumber and red bell pepper into thin match sticks and cut the avocado into thick strips. Set them aside. Assemble unagi roll. On a piece of nori/seaweed paper, evenly spread ¼ of the seasoned sushi rice.

Fluff and fan the rice until cool. Make unagi sauce - While rice is cooking, add mirin, sugar, and sake to a sauce pan on medium heat. Whisk the ingredients. Once the mixture reaches a boil, turn down the heat to low and add the soy sauce and whisk. Simmer for 10 minutes and occasionally stir.
