Combine the cornmeal, salt, baking powder, milk or water in a bowl and mix to blend. The mixture will be like damp sand. Heat the drippings in a cast-iron (preferably) medium-size or large, heavy skillet over medium-high heat. Add the corn meal mixture and allow a crust to form on the bottom, much like you would do to make cornbread.

1-⅓ cups water. Heat oil in a black iron skillet. Mix dry ingredients together with a whisk in a medium bowl. Add water and stir to mix well. Pour batter into hot oil and allow crust to brown and form along sides of pot. Start turning over the couche-couche then cover and let cook for 15 minutes on medium to low heat stirring occasionally.
