Okay. So these Chocolate Monster Cookies may be the easiest, last minute recipe ever. But I am SURE that I am not the only one swamped with work now. We need something easy for a change. I love the brownie-like texture that these cookies have, but to be very honest, you can use whatever cookie recipe you like.

Gradually add flour and cocoa powder until just combined. Stir in oats, chocolate chips, peanut butter chips, and cashews. Drop dough by 1/4-cup portions onto prepared baking sheets. Place cookies about 3 inches apart. Bake for 12 to 14 minutes or until done. Let stand for 1-2 minutes on baking sheet.

Preheat oven to 350 degrees. Line 2 large baking sheets with parchment paper. In the bowl of an electric mixer, combine peanut butter, sugars, and butter. Using the paddle attachment, beat until smooth and combined. Beat in melted chocolate and cocoa powder until smooth. Add eggs and vanilla and beat until smooth.

For the cookies. Preheat the oven to 180C / 350F / 160C fan forced. Line 2 baking trays with baking paper. Add the flour, baking powder, cocoa and sugar to processor and process to combine. Add the cold butter and process again for another 20 - 30 seconds until it is finely chopped through the flour mixture.

Mix on medium to high speed for 4-5 minutes. Add in the eggs and vanilla to the butter mixture, mix until incorporated. Then add in the dry ingredients. Fold in the chocolate chips. Using a large cookie scooper, scoop evenly sized balls of dough. Roll the dough in the mini chip and. space out on the parchment-lined baking sheets.
